The Aji Amarillo pepper has a delicious fruity flavor, along with moderate heat. Similar to the Aji Charapita, the Aji Amarillo's heat level is significant, but not overbearing, making these flavorful peppers popular for a variety of dishes, especially anything South American. Aji Amarillo peppers grow on high yielding plants that can reach 3 feet in height and the peppers are longer than other Aji varieties like the Aji Lemon, Aji Rojo, and Aji Pineapple. The pods grow to be about four inches long and mature to orange. The Aji Amarillo pepper averages about 100,000 to 150,000 Scoville Heat Units (SHU), which is similar to the Aji Lemonbut not quite as hot as the Habanero pepper.
