Developed by Steve Bender at Innovation Acre, the Caribbean Charapita is a cross between the Caribbean Red Habanero and Aji Charapita. Bender’s goal with this cross was to create a larger version of the Aji Charapita while also preserving its delicious fruity flavor. This new cross starts off green and ripens to red, with the small pods being more elongated compared to the Aji Charapita. The flavor of the Caribbean Charapita is fruity and sweet, making this pepper perfect for tropical hot sauces, salsas, marinades, and drying for powder. The heat level is comparable to the Aji Charapita, which averages about 30,000 to 50,000 Scoville Heat Units.
